Here is a recipe for kutia, a traditional Ukrainian dish made with wheat, poppy seeds, and nuts.
Ingredients:
1 cup (250ml) wheat berries
2 cups (500ml) water
1/2 cup (125ml) honey
1/2 cup (125ml) poppy seeds
1/2 cup (125ml) walnuts, chopped
Instructions:
Wash the wheat berries and soak them overnight in water.
Drain the wheat berries and place them in a large pot.
Add the water to the pot and bring to a boil.
Reduce the heat to low and simmer for 3-4 hours, or until the wheat berries are soft.
While the wheat berries are cooking, grind the poppy seeds into a fine powder.
In a separate bowl, combine the honey and poppy seed powder.
When the wheat berries are cooked, stir in the honey and poppy seed mixture.
Add the walnuts and mix well.
Serve the kutia cold.
Tips:
For a richer flavor, you can add 1/4 cup (60ml) of melted butter to the kutia.
You can also add other dried fruits, such as raisins or cranberries, to the kutia.
Kutia is traditionally served on Christmas Eve in Ukraine.
